A sweet and tangy mango chutney that pairs perfectly with grilled meats, curries, and sandwiches.
Ingredients

- 2 ripe mangoes, peeled and diced
- 1 onion, finely chopped
- 1 cup sugar
- 1/2 cup vinegar
- 1 tablespoon ginger, grated
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- Salt to taste
Instructions
- In a large saucepan, combine the diced mangoes, finely chopped onions, and sugar.
- Add the vinegar to the mixture and stir well.
- Mix in the grated ginger, mustard seeds, turmeric powder, red chili powder, and salt. Bring to a boil, then reduce to a simmer for about 30-40 minutes.
- Remove from heat, let cool, and transfer to sterilized jars for storage.
Notes
Store in sterilized glass jars for up to 2-3 weeks. Allow flavors to meld by letting it sit for a few hours or overnight before serving.
