A delightful low-carb treat made easily in a crock pot, combining rich chocolate flavors with healthy fats.
Ingredients

- 1 cup unsweetened cocoa powder
- 1 cup almond butter
- 1/2 cup coconut oil
- 1 cup erythritol or other low-carb sweetener
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup unsweetened shredded coconut (optional)
Instructions
- In a crock pot, combine almond butter, coconut oil, cocoa powder, erythritol, and vanilla extract.
- Stir everything together until well mixed and the mixture is smooth.
- If using, add the chopped nuts and shredded coconut, stirring to incorporate. Cover and cook on low for about 2 hours, stirring occasionally.
- Once melted and mixed well, pour the mixture into a greased baking dish or silicone molds. Refrigerate until set, then cut into pieces or pop out of molds. Store in the refrigerator.
Notes
Customize with different nuts or add a mint extract for a unique flavor twist. Store in an airtight container in the refrigerator for 1-2 weeks or freeze for up to a month.
