Description

A delightful low-carb treat made easily in a crock pot, combining rich chocolate flavors with healthy fats.


Ingredients

Scale
  • 1 cup unsweetened cocoa powder
  • 1 cup almond butter
  • 1/2 cup coconut oil
  • 1 cup erythritol or other low-carb sweetener
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup unsweetened shredded coconut (optional)

Instructions

  1. In a crock pot, combine almond butter, coconut oil, cocoa powder, erythritol, and vanilla extract.
  2. Stir everything together until well mixed and the mixture is smooth.
  3. If using, add the chopped nuts and shredded coconut, stirring to incorporate. Cover and cook on low for about 2 hours, stirring occasionally.
  4. Once melted and mixed well, pour the mixture into a greased baking dish or silicone molds. Refrigerate until set, then cut into pieces or pop out of molds. Store in the refrigerator.

Notes

Customize with different nuts or add a mint extract for a unique flavor twist. Store in an airtight container in the refrigerator for 1-2 weeks or freeze for up to a month.
