- 1 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup erythritol (or other low carb sweetener)
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt, whisking until well incorporated.
- In another bowl, mix the melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Spread the batter evenly in the prepared baking pan.
- Bake for about 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week. Can be frozen for up to 3 months.
