A delightful cake inspired by Earl Grey tea, offering a soft and moist texture with floral notes and sweet vanilla.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup milk
- 1 tablespoon Earl Grey tea leaves
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a small saucepan, heat the milk until it’s warm but not boiling. Add the Earl Grey tea leaves and steep for about 5 minutes. Strain and set the infused milk aside.
- Cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, alternating with the steeped tea milk, mixing just until combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve with whipped cream or powdered sugar. Pairs well with Earl Grey tea.
