- 1 large potato
- 1 cup cooked ground beef or turkey
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, canned or frozen
- 1/2 cup shredded cheese
- 1/4 cup diced tomatoes
- 1/4 cup sour cream
- 1/4 cup diced green onions
- Taco seasoning to taste
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C). Wash the potato thoroughly and poke holes in it with a fork to allow steam to escape. Rub the potato with olive oil and season it with salt.
- Place the potato directly on the oven rack and bake for about 45 minutes or until it is tender when pierced with a fork. While the potato bakes, you can prepare the taco filling.
- In a skillet over medium heat, cook the ground beef or turkey. Add taco seasoning, adjusting to your taste preferences. Cook until the meat is browned and heated through, about 6-8 minutes.
- Once the potato is baked, let it cool slightly before slicing it open. Gently fluff the inside with a fork, then fill it with the cooked ground meat, black beans, corn, diced tomatoes, and shredded cheese. Top generously with sour cream and diced green onions. Serve warm and enjoy!
Notes
For a fiesta twist, add jalapeños or avocado slices for an extra kick. You can also substitute the ground meat with plant-based proteins for a vegetarian version.
