Description
A delightful side dish infused with bright lemon flavors and aromatic herbs, perfect for any occasion.
Ingredients
Scale
- 1 cup long grain white rice (such as basmati or jasmine)
- 2 tablespoons olive oil
- 1 small yellow onion, finely diced
- 3 garlic cloves, minced
- 2 ½ cups low-sodium chicken broth (or vegetable broth for vegetarian)
- Zest of 1 lemon
- Juice of 1 lemon (about 2–3 tablespoons)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté for about 2-3 minutes until it becomes soft and translucent. Then, add the minced garlic, cooking until it releases its fragrant aroma, typically about 30 seconds.
- Stir in the rice, ensuring each grain gets well coated with the oil and aromatic mixture. This should take about 1 minute, allowing the rice to slightly toast for enhanced flavor.
- Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir everything together and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer for about 18-20 minutes until all the liquid is absorbed.
- Remove the pot from the heat but let it sit covered for an additional 5 minutes. This resting time helps the rice become even fluffier. Afterward, fluff with a fork and adjust the seasoning if needed before serving.
Notes
Rinse the rice before cooking for a fluffier texture. Store leftovers in an airtight container for 3-4 days.
