  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté for about 2-3 minutes until it becomes soft and translucent. Then, add the minced garlic, cooking until it releases its fragrant aroma, typically about 30 seconds.
  2. Stir in the rice, ensuring each grain gets well coated with the oil and aromatic mixture. This should take about 1 minute, allowing the rice to slightly toast for enhanced flavor.
  3. Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir everything together and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer for about 18-20 minutes until all the liquid is absorbed.
  4. Remove the pot from the heat but let it sit covered for an additional 5 minutes. This resting time helps the rice become even fluffier. Afterward, fluff with a fork and adjust the seasoning if needed before serving.

Notes

Rinse the rice before cooking for a fluffier texture. Store leftovers in an airtight container for 3-4 days.
