Lemon Pepper Tofu

Ingredients

  • 1 block firm tofu
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Drain and press the tofu to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix together olive oil, lemon zest, lemon juice, black pepper, garlic powder, and salt.
  3. Add the tofu cubes to the marinade, coating them well, and let sit for at least 30 minutes.
  4. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Spread the marinated tofu in a single layer and bake for 25-30 minutes, flipping halfway through.
  5. Once baked, garnish with fresh parsley before serving.

Notes

For better flavor, marinate tofu for a few hours or overnight. Add vegetables to the baking sheet for a complete dish.
