Ingredients

- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup lemon curd
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine the rolled oats, all-purpose flour, brown sugar, granulated sugar, melted butter, baking soda, and salt in a large mixing bowl until crumbly.
- Press half of the oat mixture into the bottom of the prepared baking pan.
- Spread the lemon curd evenly over the crust.
- Sprinkle the remaining oat mixture over the lemon curd layer.
- Bake in the preheated oven for about 25-30 minutes, until the top is golden brown.
- Cool completely in the pan before slicing into squares.
