Description

Delightful dessert bars featuring a tangy lemon curd filling and a crumbly oat crust.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup lemon curd
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the rolled oats, all-purpose flour, brown sugar, granulated sugar, melted butter, baking soda, and salt in a large mixing bowl until crumbly.
  3. Press half of the oat mixture into the bottom of the prepared baking pan.
  4. Spread the lemon curd evenly over the crust.
  5. Sprinkle the remaining oat mixture over the lemon curd layer.
  6. Bake in the preheated oven for about 25-30 minutes, until the top is golden brown.
  7. Cool completely in the pan before slicing into squares.

Notes

Serve with whipped cream or vanilla ice cream for extra indulgence.
