- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup fresh lemon juice
- 1 cup whipped topping
- 2 tablespoons lemon zest
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, softened butter, and powdered sugar. Mix until crumbly and press into the bottom of a 9×13 inch pan to form the crust. Bake for 15 minutes, then cool completely.
- In a separate bowl, use an electric mixer to beat together softened cream cheese and granulated sugar until smooth. Spread over the cooled crust.
- Whisk together fresh lemon juice, milk, and lemon zest. Pour this mixture over the cream cheese layer.
- Top with whipped topping, spread evenly, then cover with plastic wrap and chill in the refrigerator for at least 2 hours before serving. Cut into squares and enjoy!
Notes
For best results, use freshly squeezed lemon juice and ensure to chill thoroughly. Can be made a day ahead and stored in the refrigerator.
