Description

A refreshing dessert that combines tart lemons with creamy goodness, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup fresh lemon juice
  • 1 cup whipped topping
  • 2 tablespoons lemon zest
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, softened butter, and powdered sugar. Mix until crumbly and press into the bottom of a 9×13 inch pan to form the crust. Bake for 15 minutes, then cool completely.
  2. In a separate bowl, use an electric mixer to beat together softened cream cheese and granulated sugar until smooth. Spread over the cooled crust.
  3. Whisk together fresh lemon juice, milk, and lemon zest. Pour this mixture over the cream cheese layer.
  4. Top with whipped topping, spread evenly, then cover with plastic wrap and chill in the refrigerator for at least 2 hours before serving. Cut into squares and enjoy!

Notes

For best results, use freshly squeezed lemon juice and ensure to chill thoroughly. Can be made a day ahead and stored in the refrigerator.
