Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then stir in the milk, fresh lemon juice, lemon zest, and vanilla extract until thoroughly mixed.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Consider serving with a simple glaze of powdered sugar and lemon juice for added sweetness. Storing in an airtight container at room temperature will keep it fresh for up to 3 days.
