Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the vanilla extract and lemon zest.
- Whisk together the all-purpose flour, salt, and dried lavender in another bowl.
- Add the dry mixture to the creamed mixture, mixing until just combined.
- Roll the dough into 1-inch balls and place them on a baking sheet.
- Make an indentation in the center of each cookie with your thumb.
- Fill each indentation with lemon curd.
- Bake for 12-15 minutes or until edges are lightly golden.
- Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
