Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract. Mix until smooth and creamy.
- In another bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
- Press the graham cracker mixture into the bottom of a lined baking dish to create a crust.
- Pour the cream cheese mixture over the crust and spread evenly.
- Refrigerate for at least 2 hours or until set.
- Cut into bite-sized squares and serve.
- Optional: Top with fresh fruit or a dollop of whipped cream before serving.
