Delicious muffins bursting with juicy blueberries and zesty lemon, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, eggs, buttermilk, lemon juice, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.

Store in an airtight container for up to 3 days, or freeze for up to 3 months.
