Description

Delightful Lemon Blueberry Bars combining tangy lemon and juicy blueberries for a refreshing dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for the crust)
  • 1 cup fresh lemon juice
  • 1 cup granulated sugar (for the filling)
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • Zest of 2 lemons
  • 1 cup fresh blueberries
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix well and press into the bottom of a greased 9×13 inch baking dish.
  3. In another bowl, whisk together lemon juice, 1 cup sugar, flour, eggs, and lemon zest until smooth. Gently fold in blueberries and pour over the crust.
  4. Bake in the preheated oven for 25-30 minutes or until set and lightly golden on the edges.
  5. Allow to cool completely, cut into bars, and dust with powdered sugar before serving.

Notes

For best flavor, use freshly squeezed lemon juice and zest. Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.
