- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup onion, finely chopped
- 1 egg
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried parsley
- 1 cup beef broth
- 1 cup heavy cream
- 1 tbsp soy sauce or coconut aminos
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine ground beef, ground pork, almond flour, Parmesan cheese, onion, egg, garlic powder, salt, black pepper, and dried parsley. Mix well and form into small meatballs.
- Place the meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes until cooked through.
- In a skillet, heat beef broth, heavy cream, and soy sauce over medium heat.
- Add the cooked meatballs to the skillet and simmer for 5-10 minutes until the sauce thickens.
- Serve warm, garnished with additional parsley if desired.
Notes
These meatballs are versatile and can be served with steamed vegetables or cauliflower rice. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
