Description

Delicious low-carb Keto Peppermint Patties that satisfy your sweet tooth without the guilt of high carbs and sugar.


Ingredients

  • 1 cup unsweetened coconut flakes
  • 1/4 cup coconut oil
  • 1/4 cup powdered erythritol (or another low-carb sweetener)
  • 1 teaspoon peppermint extract
  • 1/2 cup sugar-free dark chocolate chips

Instructions

  1. In a bowl, mix the coconut flakes, coconut oil, powdered erythritol, and peppermint extract until well combined.
  2. Shape the mixture into small patties and place them on a parchment-lined baking sheet.
  3. Freeze the patties for about 30 minutes until firm.
  4. Melt the sugar-free dark chocolate chips in a microwave or double boiler.
  5. Dip each patty into the melted chocolate, ensuring it’s fully coated, and place them back on the baking sheet.
  6. Chill in the refrigerator until the chocolate is set.

Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
