Ingredients

- 1/4 cup coconut oil
- 1/4 cup powdered erythritol (or another low-carb sweetener)
- 1 teaspoon peppermint extract
- 1/2 cup sugar-free dark chocolate chips
Instructions
- In a bowl, mix the coconut flakes, coconut oil, powdered erythritol, and peppermint extract until well combined.
- Shape the mixture into small patties and place them on a parchment-lined baking sheet.
- Freeze the patties for about 30 minutes until firm.
- Melt the sugar-free dark chocolate chips in a microwave or double boiler.
- Dip each patty into the melted chocolate, ensuring it’s fully coated, and place them back on the baking sheet.
- Chill in the refrigerator until the chocolate is set.

Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
