Description

A delicious keto-friendly dessert that captures the classic flavors of pecan pie without the high sugar content.


Ingredients

  • 1 ½ cups pecan halves
  • 1 cup almond flour
  • ½ cup erythritol or another keto-friendly sweetener
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, erythritol, melted butter, and salt until well mixed to form a dough.
  3. Press the dough into the bottom of a pie pan to create the crust.
  4. In another bowl, whisk together the eggs, vanilla extract, and cinnamon.
  5. Stir in the pecan halves until they are well coated with the mixture.
  6. Pour the pecan mixture over the crust and spread evenly.
  7. Bake for 30-35 minutes or until the filling is set.
  8. Allow to cool before serving.
