- 1 ½ cups pecan halves
- 1 cup almond flour
- ½ cup erythritol or another keto-friendly sweetener
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, erythritol, melted butter, and salt until well mixed to form a dough.
- Press the dough into the bottom of a pie pan to create the crust.
- In another bowl, whisk together the eggs, vanilla extract, and cinnamon.
- Stir in the pecan halves until they are well coated with the mixture.
- Pour the pecan mixture over the crust and spread evenly.
- Bake for 30-35 minutes or until the filling is set.
- Allow to cool before serving.
Notes
For serving, enjoy slightly warm or at room temperature, plain or with keto-friendly ice cream or whipped cream.
