- 1 cup almond flour
- 1/4 cup butter, melted
- 1/4 cup erythritol or other keto-friendly sweetener
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups pecans, chopped
- 1/2 cup keto-friendly sweetener
- 1/4 cup unsweetened coconut milk
- 3 large eggs
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a bowl, combine almond flour, melted butter, erythritol, vanilla extract, and salt to form a crust. Press the mixture into the bottom of the prepared baking dish.
- Bake the crust for 10 minutes.
- In another bowl, mix the chopped pecans, keto-friendly sweetener, coconut milk, and eggs until well combined.
- Pour the pecan mixture over the crust.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Allow to cool before cutting into bars.
Notes
Press the crust firmly to avoid crumbling when cut. Consider adding cinnamon or nutmeg for enhanced flavor. Check for doneness around the 20-minute mark to prevent overbaking.
