Description

A rich and creamy dessert that’s perfect for a low-carb diet, made with peanut butter and heavy whipping cream.


Ingredients

  • 1 cup peanut butter (sugar-free)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered erythritol (or preferred sweetener)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the peanut butter, powdered erythritol, vanilla extract, and a pinch of salt. Mix until smooth.
  2. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  3. Gently fold the whipped cream into the peanut butter mixture until fully combined.
  4. Spoon the mousse into serving dishes and refrigerate for at least 1 hour before serving.

Notes

Chill your mixing bowl for fluffier whipped cream. Store in an airtight container in the refrigerator for up to 5 days. Avoid freezing.
