Ingredients

  • 500g mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onions and garlic, sautéing until the onions are translucent.
  3. Add the mushrooms and cook until they are soft.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Blend the soup with an immersion blender until smooth (or blend in batches in a regular blender).
  7. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, add herbs like thyme or rosemary while sautéing. Use different types of mushrooms for variety. For a thicker soup, reduce vegetable broth slightly.
