Description

A flavorful, low-carb dish featuring tender chicken breast in a creamy sauce with sun-dried tomatoes and spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, sliced
  • 1 cup spinach, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parmesan cheese, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper and add them to the skillet. Cook until golden brown on both sides and cooked through, about 7-8 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the chicken broth and heavy cream, then add the Italian seasoning. Stir to combine and let it simmer for about 3-5 minutes.
  4. Add the sun-dried tomatoes and spinach to the skillet, cooking until the spinach is wilted.
  5. Return the chicken to the skillet, spooning sauce over the top. Allow to simmer for another 2-3 minutes.
  6. Serve the chicken garnished with Parmesan cheese.

Notes

Garnish with fresh Parmesan cheese. Pairs well with a salad or cauliflower rice.
