Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or other keto sweetener
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered erythritol
  • 1/4 cup mint extract
  • Green food coloring (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, cocoa powder, erythritol, and melted butter to form the crust. Press the mixture into a pie pan and bake for 10-12 minutes. Let cool.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. In another bowl, mix the softened cream cheese with powdered erythritol and mint extract until smooth.
  4. Gently fold the whipped cream into the cream cheese mixture. If desired, add a few drops of green food coloring for a vibrant look.
  5. Pour the filling into the cooled crust and spread evenly.
