- 1/4 cup mint extract
- Green food coloring (optional)

Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, cocoa powder, erythritol, and melted butter to form the crust. Press the mixture into a pie pan and bake for 10-12 minutes. Let cool.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix the softened cream cheese with powdered erythritol and mint extract until smooth.
- Gently fold the whipped cream into the cream cheese mixture. If desired, add a few drops of green food coloring for a vibrant look.
- Pour the filling into the cooled crust and spread evenly.
