- 1 lb ground beef
- 1 cup shredded cheese (cheddar or your choice)
- 1 large low-carb tortilla
- 1/2 cup diced tomatoes
- 1/2 cup shredded lettuce
- 1/4 cup sour cream
- 1 tsp taco seasoning
- Olive oil (for cooking)
Instructions
- In a skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula. Drain excess fat, then add taco seasoning and mix until evenly distributed.
- Lay the tortilla flat on a clean surface. On one half of the tortilla, layer the cheese, cooked beef, diced tomatoes, shredded lettuce, and a dollop of sour cream to create a feast of flavors.
- Fold the tortilla over to create a half-moon shape. Then, fold the edges of the tortilla inward to enclose the filling, forming a pocket that locks in all that deliciousness.
- Heat a little olive oil in the skillet. Place the crunchwrap in the skillet and cook until golden brown and crisp on both sides, about 3-4 minutes per side.
- Remove the crunchwrap from the skillet, slice it in half, and serve immediately. Enjoy the warm, cheesy goodness!
