Ingredients

- 2 cups almond flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut oil, melted
- 1/4 cup erythritol or preferred sweetener
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 cup fresh or dried cranberries (sugar-free if dried)
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine almond flour, shredded coconut, erythritol, baking powder, and salt.
- Add melted coconut oil and vanilla extract to the dry ingredients, mixing until well combined.
- Gently fold in the cranberries.
- Pour the mixture into the prepared baking dish and press it down evenly.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- Let cool before slicing into bars. Enjoy!
Notes
Adjust the amount of erythritol to taste; store in an airtight container for up to a week.
