Delightful no-churn coffee ice cream with rich flavors, perfect for a keto diet.


Ingredients

  • 1 cup heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup erythritol or another keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder (optional, for chocolate flavor)
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine heavy cream, almond milk, brewed coffee, erythritol, vanilla extract, cocoa powder (if using), and a pinch of salt.
  2. Whisk the mixture until well combined and slightly frothy.
  3. Pour the mixture into a freezer-safe container, spreading it evenly.
  4. Place in the freezer for about 4-6 hours or until firm. Stir every hour for the first 3 hours.
  5. Once frozen to your desired consistency, scoop out and enjoy!

Notes

For an extra coffee flavor, consider adding an extra shot of espresso. If a sweeter taste is desired, adjust the erythritol accordingly.
