Ingredients

- 1 ½ cups almond flour
- ½ cup erythritol or another keto-friendly sweetener
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 3 large eggs
- ½ cup unsweetened almond milk
- ¼ cup melted butter or coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together almond flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
Store in an airtight container at room temperature for up to three days, or freeze individually wrapped muffins for longer storage.
