- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup powdered erythritol or other keto-friendly sweetener
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 large egg whites
- 1 teaspoon almond extract
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Combine almond flour, cocoa powder, erythritol, salt, and baking powder in a bowl.
- In another bowl, whisk the egg whites until frothy, then add the almond extract.
- Gradually fold the wet ingredients into the dry ingredients until a dough forms.
- If using, fold in sugar-free chocolate chips.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 15-20 minutes until the cookies are set and slightly cracked on top.
- Allow to cool completely before serving.
Notes
Store in an airtight container at room temperature for about one week, or refrigerate for up to two weeks. Freeze for up to three months.
