Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup celery, diced
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the celery, zucchini, bell peppers, and garlic; sauté for about 5 minutes until the vegetables are tender.
  2. Add the chicken broth, cooked chicken, thyme, oregano, salt, and pepper to the pot.
