Description

Deliciously creamy and sweet Keto Cheesecake Bites that satisfy dessert cravings while keeping you on track with a low-carb lifestyle.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered erythritol or another keto-friendly sweetener
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/4 cup almond flour
  • 1/4 cup sour cream
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, beat the cream cheese and erythritol together until smooth.
  3. Add in the vanilla extract, egg, almond flour, sour cream, and a pinch of salt. Mix until well combined.
  4. Line a mini muffin tin with paper liners and fill each one with the cheesecake mixture.
  5. Bake for 15-20 minutes or until the tops are set. Let cool and refrigerate for at least an hour before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to 2 months.
