- 8 oz cream cheese, softened
- 1/2 cup powdered erythritol or another keto-friendly sweetener
- 1 tsp vanilla extract
- 1 large egg
- 1/4 cup almond flour
- 1/4 cup sour cream
- Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese and erythritol together until smooth.
- Add in the vanilla extract, egg, almond flour, sour cream, and a pinch of salt. Mix until well combined.
- Line a mini muffin tin with paper liners and fill each one with the cheesecake mixture.
- Bake for 15-20 minutes or until the tops are set. Let cool and refrigerate for at least an hour before serving.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to 2 months.
