- 1/4 cup coconut flour
- 1/2 cup erythritol (or any low-carb sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (almonds or walnuts)
- 1/2 teaspoon almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, vanilla extract, and almond extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Fold in the chopped nuts.
- Shape the dough into a log on the prepared baking sheet and flatten it slightly.
- Bake for about 25 minutes or until golden brown.
- Let it cool slightly, then slice into biscotti shapes.
- Place the sliced biscotti back onto the baking sheet and bake for an additional 10-15 minutes to dry out.
- Allow to cool completely before serving.
Notes
Store in an airtight container at room temperature for up to two weeks; refrigerate or freeze for longer storage. Customize with different nuts or add sugar-free chocolate chips for variety.
