Description

A perfect low-carb treat for satisfying your sweet tooth, these crunchy cookies are great for dipping in coffee or tea and are made with healthy ingredients.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol (or any low-carb sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (almonds or walnuts)
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the eggs, vanilla extract, and almond extract.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Fold in the chopped nuts.
  6. Shape the dough into a log on the prepared baking sheet and flatten it slightly.
  7. Bake for about 25 minutes or until golden brown.
  8. Let it cool slightly, then slice into biscotti shapes.
  9. Place the sliced biscotti back onto the baking sheet and bake for an additional 10-15 minutes to dry out.
  10. Allow to cool completely before serving.

Notes

Store in an airtight container at room temperature for up to two weeks; refrigerate or freeze for longer storage. Customize with different nuts or add sugar-free chocolate chips for variety.
