Ingredients

- 3 to 4 pounds beef roast (e.g., chuck or ribeye)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup beef broth
- 1 onion, quartered
- Carrots and potatoes for roasting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
- Rub the herb paste all over the beef roast, ensuring it’s evenly coated.
- Place the roast in a roasting pan and surround it with quartered onions and optional carrots and potatoes.
- Pour beef broth into the bottom of the pan.
- Roast for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (145°F for medium-rare).
- Let the beef rest for 10-15 minutes before slicing.
- Serve with roasted vegetables and pan juices.
