Ingredients

  • 3 to 4 pounds beef roast (e.g., chuck or ribeye)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 onion, quartered
  • Carrots and potatoes for roasting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
  3. Rub the herb paste all over the beef roast, ensuring it’s evenly coated.
  4. Place the roast in a roasting pan and surround it with quartered onions and optional carrots and potatoes.
  5. Pour beef broth into the bottom of the pan.
  6. Roast for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (145°F for medium-rare).
  7. Let the beef rest for 10-15 minutes before slicing.
  8. Serve with roasted vegetables and pan juices.
