Ingredients

  • 4 chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat. Pat the chicken thighs dry with a paper towel.
  2. Rub the chicken thighs with jerk seasoning and olive oil, then let marinate for a few minutes.
  3. Grill the chicken thighs for about 7-10 minutes on each side until cooked through, reaching an internal temperature of 165°F (75°C).
  4. While grilling, prepare the mango avocado salsa by combining mango, avocado, red onion, lime juice, salt, and pepper in a mixing bowl. Gently stir until mixed.
  5. Remove the chicken from the grill, let it rest, then serve topped with the mango avocado salsa and garnish with fresh cilantro.

Notes

Marinate chicken thighs for deeper flavor. Serve with rice or tortillas.
