Description

A bright and colorful Italian Grinder Salad that combines crisp Romaine lettuce with savory salami and tangy Kalamata olives for a refreshing meal.


Ingredients

  • 1 head Romaine lettuce
  • 1 red onion
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1 bell pepper
  • 1/2 cup Kalamata olives
  • 4 oz salami
  • 4 oz capicola
  • 4 oz provolone cheese
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Chop the Romaine lettuce into bite-sized pieces and place in a large bowl.
  2. Slice the red onions, cherry tomatoes, cucumbers, and bell peppers thinly and add to the bowl.
  3. Combine the Kalamata olives, salami, capicola, and cubes of provolone cheese with the other ingredients.
  4. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl, then drizzle over the salad and toss well.

Notes

For best flavor, serve immediately or allow to chill in the refrigerator for a short time. Store leftovers in an airtight container for up to 2 days.
