- 1 head Romaine lettuce
- 1 red onion
- 1 cup cherry tomatoes
- 1 cucumber
- 1 bell pepper
- 1/2 cup Kalamata olives
- 4 oz salami
- 4 oz capicola
- 4 oz provolone cheese
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Chop the Romaine lettuce into bite-sized pieces and place in a large bowl.
- Slice the red onions, cherry tomatoes, cucumbers, and bell peppers thinly and add to the bowl.
- Combine the Kalamata olives, salami, capicola, and cubes of provolone cheese with the other ingredients.
- Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl, then drizzle over the salad and toss well.
Notes
For best flavor, serve immediately or allow to chill in the refrigerator for a short time. Store leftovers in an airtight container for up to 2 days.
