Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the lemon juice, sugar, eggs, melted butter, and lemon zest until well combined and smooth.
- Pour the mixture into the pre-made mini tart shells, filling each one about 3/4 full. Bake for 15-20 minutes until set and the edges are golden.
