- 2 medium zucchinis
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 425°F (220°C). Slice the zucchinis into thin rounds.
- In a mixing bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk the eggs. Dip each zucchini slice into the egg, then coat with the breadcrumb mixture.
- Line a baking sheet with parchment paper and arrange the coated zucchini slices in a single layer. Drizzle with olive oil and bake for 20-25 minutes until crispy and golden.
Notes
For extra crispiness, broil for the last 2-3 minutes. Serve with marinara or ranch dressing for dipping.
