Description

Deliciously crispy zucchini bites coated in Parmesan and spices, perfect for snacking or as an appetizer.


Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 425°F (220°C). Slice the zucchinis into thin rounds.
  2. In a mixing bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. In a separate bowl, whisk the eggs. Dip each zucchini slice into the egg, then coat with the breadcrumb mixture.
  4. Line a baking sheet with parchment paper and arrange the coated zucchini slices in a single layer. Drizzle with olive oil and bake for 20-25 minutes until crispy and golden.

Notes

For extra crispiness, broil for the last 2-3 minutes. Serve with marinara or ranch dressing for dipping.
