- 1 cup strong brewed coffee
- 2 tablespoons coffee liqueur (optional)
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder for dusting
- Dark chocolate shavings for garnish (optional)
Instructions
- Brew a strong cup of coffee and let it cool completely. If desired, stir in the coffee liqueur.
- In a mixing bowl, combine the mascarpone cheese, heavy whipping cream, granulated sugar, and vanilla extract. Beat until soft peaks form.
- Dip each ladyfinger into the coffee mixture to soak slightly, being careful not to oversoak.
- In dessert cups, layer the soaked ladyfingers followed by a layer of the mascarpone mixture. Repeat until filled, ending with mascarpone on top.
- Dust with cocoa powder and garnish with chocolate shavings, if desired.
- Refrigerate for at least 4 hours, or overnight to marry the flavors.
Notes
For best flavor, use freshly brewed coffee. Feel free to add flavored extracts for variety.
