Description

Delightful fusion of sweet corn and spicy jalapeños enveloped in cheesy goodness, perfect as a snack or appetizer.


Ingredients

  • 1 cup corn kernels
  • 1/2 cup shredded cheese (cheddar or pepper jack)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 finely chopped jalapeño
  • 1/4 cup chopped green onions
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 beaten egg
  • 1/4 cup milk
  • Oil for frying

Instructions

  1. In a large bowl, combine corn, cheese, flour, cornmeal, jalapeño, green onions, baking powder, salt, and black pepper.
  2. In another bowl, whisk together the beaten egg and milk.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Heat oil in a frying pan over medium heat and drop spoonfuls of the batter into the pan. Fry until golden brown, about 3-4 minutes per side.
  5. Remove fritters from the pan and drain on paper towels. Serve warm with dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or skillet to regain crispiness.
