Ingredients

- 1 cup corn kernels
- 1/2 cup shredded cheese (cheddar or pepper jack)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 finely chopped jalapeño
- 1/4 cup chopped green onions
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 beaten egg
- 1/4 cup milk
- Oil for frying
Instructions
- In a large bowl, combine corn, cheese, flour, cornmeal, jalapeño, green onions, baking powder, salt, and black pepper.
- In another bowl, whisk together the beaten egg and milk.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Heat oil in a frying pan over medium heat and drop spoonfuls of the batter into the pan. Fry until golden brown, about 3-4 minutes per side.
- Remove fritters from the pan and drain on paper towels. Serve warm with dipping sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or skillet to regain crispiness.
