  • 1 teaspoon paprika
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the mixed vegetables with harissa paste, olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast for 20-25 minutes, or until tender and caramelized.
  4. Remove from the oven and garnish with fresh herbs before serving.

Notes

For extra crispiness, broil for an additional 2-3 minutes at the end of roasting. Adjust harissa according to heat preference.
