Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup filling (like chocolate ganache or buttercream)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then add vanilla extract.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  4. Fold in the chocolate chips gently.
  5. Drop rounded tablespoons of cookie dough onto ungreased baking sheets, spacing at least 2 inches apart. Bake for 10-12 minutes until edges look set.
  6. Allow cookies to cool on baking sheets for about 5 minutes before transferring to wire racks.
  7. Spread filling on the bottom of one cookie and press another cookie on top to create a sandwich.

Notes

For a unique flavor, try adding a dash of espresso powder to the batter. Store in an airtight container for up to 3 days, or freeze without filling for up to 3 months.
