- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 1 cup filling (like chocolate ganache or buttercream)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then add vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips gently.
- Drop rounded tablespoons of cookie dough onto ungreased baking sheets, spacing at least 2 inches apart. Bake for 10-12 minutes until edges look set.
- Allow cookies to cool on baking sheets for about 5 minutes before transferring to wire racks.
- Spread filling on the bottom of one cookie and press another cookie on top to create a sandwich.
Notes
For a unique flavor, try adding a dash of espresso powder to the batter. Store in an airtight container for up to 3 days, or freeze without filling for up to 3 months.
