- 500g all-purpose flour
- 200g sugar
- 100g unsalted butter, softened
- 30g fresh yeast or 10g dry yeast
- 200ml milk, lukewarm
- 3 large eggs
- 1 tsp salt
- 1 tsp cinnamon
- Zest of 1 orange
- Zest of 1 lemon
- 150g mixed candied fruits
- 100g almonds, chopped
- Royal icing (for decoration)
- 1 small figurine or bean (optional for tradition)
Instructions
- Dissolve the yeast in lukewarm milk and let sit for 10 minutes until frothy.
- In a bowl, mix flour, sugar, salt, and cinnamon. Create a well in the center and add butter, eggs, frothy yeast mixture, orange, and lemon zest. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Incorporate candied fruits and almonds.
- Shape the dough into a ring and place on a lined baking tray. Cover and let rise for 1-2 hours until doubled in size.
- Preheat the oven to 180°C (350°F). Bake for 30-35 minutes until golden brown and fragrant.
- Cool completely on a wire rack. Decorate with royal icing and hide a figurine or bean inside if desired.
Notes
Store in an airtight container for up to 3 days or in the refrigerator for up to a week. Freeze for up to 2 months.
