Description

Tender and flavorful Instant Pot short ribs, perfect for cozy family dinners or special occasions.


Ingredients

  • 2 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as parsley or thyme)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add the olive oil and let it heat up. Brown the short ribs on all sides for 5-7 minutes, then remove the ribs and set aside.
  2. Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes until softened.
  3. Pour in the beef broth and red wine (if using), scraping the bottom of the pot to deglaze. Stir in the soy sauce, tomato paste, salt, and pepper.
  4. Return the short ribs to the pot, cover with the sauce, lock the lid, and set to ‘Manual’ or ‘Pressure Cook’ for 45 minutes. Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.

Notes

Serve these short ribs with creamy mashed potatoes, buttered corn, or a fresh side salad. They can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
