Ingredients

- 2 pounds beef short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons soy sauce
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Fresh herbs for garnish (such as parsley or thyme)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add the olive oil and let it heat up. Brown the short ribs on all sides for 5-7 minutes, then remove the ribs and set aside.
- Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes until softened.
- Pour in the beef broth and red wine (if using), scraping the bottom of the pot to deglaze. Stir in the soy sauce, tomato paste, salt, and pepper.
- Return the short ribs to the pot, cover with the sauce, lock the lid, and set to ‘Manual’ or ‘Pressure Cook’ for 45 minutes. Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
Notes
Serve these short ribs with creamy mashed potatoes, buttered corn, or a fresh side salad. They can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
