- 1 pound skinless chicken breasts
- 10 oz chicken beef sausage link
- 1 cup long grain enriched white rice
- 4 tablespoons butter
- 24 oz chicken broth
- 1 cup chopped green peppers
- 1 cup chopped celery
- 1 cup chopped onion
- 1 pound raw shrimp
- Traditional Cajun spices
Instructions
- Set your Instant Pot to sauté mode and heat 1/4 cup of vegetable oil.
- Whisk in 1/4 cup of flour, stirring constantly for 10-15 minutes until the roux turns a chocolate brown.
- Add chopped onions, bell peppers, and celery; stir for 5 minutes. Then, add minced garlic and sauté for 1 minute.
- Stir in diced tomatoes, Cajun seasoning, bay leaves, salt, and pepper; simmer for 2-3 minutes. Add diced chicken thighs and stir to coat.
- Pour in 4 cups of chicken broth, scraping the pot’s bottom, close the lid, set steam release to sealing, and cook on high for 10 minutes.
- Perform a quick pressure release and add peeled shrimp; set to sauté for 3-5 minutes until shrimp are pink and opaque.
Notes
For extra kick, add hot sauce before serving. Customize the sausage and vegetables to your liking.
