A soul-warming Instant Pot gumbo brimming with chicken, shrimp, and rich Cajun flavors—a perfect dish for gatherings or cozy family meals.


Ingredients

  • 1 pound skinless chicken breasts
  • 10 oz chicken beef sausage link
  • 1 cup long grain enriched white rice
  • 4 tablespoons butter
  • 24 oz chicken broth
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 pound raw shrimp
  • Traditional Cajun spices

Instructions

  1. Set your Instant Pot to sauté mode and heat 1/4 cup of vegetable oil.
  2. Whisk in 1/4 cup of flour, stirring constantly for 10-15 minutes until the roux turns a chocolate brown.
  3. Add chopped onions, bell peppers, and celery; stir for 5 minutes. Then, add minced garlic and sauté for 1 minute.
  4. Stir in diced tomatoes, Cajun seasoning, bay leaves, salt, and pepper; simmer for 2-3 minutes. Add diced chicken thighs and stir to coat.
  5. Pour in 4 cups of chicken broth, scraping the pot’s bottom, close the lid, set steam release to sealing, and cook on high for 10 minutes.
  6. Perform a quick pressure release and add peeled shrimp; set to sauté for 3-5 minutes until shrimp are pink and opaque.

Notes

For extra kick, add hot sauce before serving. Customize the sausage and vegetables to your liking.
