Description

A quick and indulgent one-pot creamy penne pasta made in the Instant Pot, perfect for busy weeknights.


Ingredients

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Set the Instant Pot to sauté mode and add the olive oil. Once hot, add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for an additional minute, stirring continuously.
  3. Pour in the penne pasta and broth, ensuring the pasta is submerged. Close the lid and set the valve to sealing. Cook on high pressure for 4 minutes.
  4. Once done, carefully release the pressure, open the lid, and stir in the heavy cream and Parmesan until smooth. Season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

Customize with different cheeses or add vegetables for extra nutrients. Store leftovers in the fridge for up to 3 days.
