- 2 sweet potatoes
- 1 lb ground beef
- 2 tablespoons hot honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Pierce the sweet potatoes all over with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- Cook the ground beef in a skillet over medium heat until browned and drain any excess fat.
- Add hot honey, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine and cook for 2-3 minutes.
- Remove sweet potatoes from the oven, let them cool, and cut in half lengthwise. Scoop out some flesh to create ‘boats’.
- Fill each sweet potato half with the beef mixture.
- Garnish with chopped green onions.
- Serve warm and enjoy.
Notes
To avoid overcooking sweet potatoes, start checking for doneness at 45 minutes. For a milder flavor, reduce the hot honey or use regular honey.
