Description

A delightful dish combining savory ground beef with caramelized sweet potatoes, topped with a spicy honey drizzle.


Ingredients

  • 2 sweet potatoes
  • 1 lb ground beef
  • 2 tablespoons hot honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes all over with a fork.
  2. Bake the sweet potatoes for 45-60 minutes, or until tender.
  3. Cook the ground beef in a skillet over medium heat until browned and drain any excess fat.
  4. Add hot honey, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine and cook for 2-3 minutes.
  5. Remove sweet potatoes from the oven, let them cool, and cut in half lengthwise. Scoop out some flesh to create ‘boats’.
  6. Fill each sweet potato half with the beef mixture.
  7. Garnish with chopped green onions.
  8. Serve warm and enjoy.

Notes

To avoid overcooking sweet potatoes, start checking for doneness at 45 minutes. For a milder flavor, reduce the hot honey or use regular honey.
