  • ⅓ cup hot cocoa mix
  • 3 tablespoons heavy cream
  • 12 mini marshmallows (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with cupcake liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar until evenly combined.
  3. In a separate bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients, then carefully stir in the hot water.
  5. Fill each cupcake liner about two-thirds full with the batter and bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cupcakes to cool completely in the tray, then transfer them to a wire rack.
  7. For the frosting, beat the softened butter in a mixing bowl until creamy and smooth.
  8. Gradually add powdered sugar and hot cocoa mix to the butter, mixing on low speed until incorporated.
  9. Pour in the heavy cream and beat until the frosting is light and fluffy.
  10. Pipe the frosting onto the cooled cupcakes and top each with a mini marshmallow.

Notes

Ensure ingredients are at room temperature for the best results. Avoid overmixing the batter. For extra chocolate flavor, consider adding chocolate chips.
