Description

Delightful French macarons filled with velvety dark chocolate ganache, perfect for cozy gatherings or as a sweet gift.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate (for filling)
  • 1/2 cup heavy cream (for filling)

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a large bowl, sift together the almond flour, powdered sugar, and cocoa powder.
  3. In a separate bowl, beat the egg whites using an electric mixer. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Gently fold the dry ingredient mix into the egg whites until just combined.
  5. Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets. Let them sit at room temperature for about 30 minutes.
  6. Bake in the preheated oven for 15-20 minutes, or until the shells can easily lift off the parchment. Allow them to cool completely.
  7. For the filling, heat the heavy cream until it simmers, then pour over the chopped dark chocolate and stir until smooth. Allow the ganache to cool slightly before using.
  8. Pair the cooled macaron shells, fill one side with chocolate ganache, then place another shell on top to create a sandwich.

Notes

Use aged egg whites for better results. Let the macarons mature in the fridge for a day after filling to enhance the flavor.
