- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 teaspoon cocoa powder
- 1/2 teaspoon vanilla extract
- 1/2 cup dark chocolate (for filling)
- 1/2 cup heavy cream (for filling)
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a large bowl, sift together the almond flour, powdered sugar, and cocoa powder.
- In a separate bowl, beat the egg whites using an electric mixer. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Gently fold the dry ingredient mix into the egg whites until just combined.
- Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets. Let them sit at room temperature for about 30 minutes.
- Bake in the preheated oven for 15-20 minutes, or until the shells can easily lift off the parchment. Allow them to cool completely.
- For the filling, heat the heavy cream until it simmers, then pour over the chopped dark chocolate and stir until smooth. Allow the ganache to cool slightly before using.
- Pair the cooled macaron shells, fill one side with chocolate ganache, then place another shell on top to create a sandwich.
Notes
Use aged egg whites for better results. Let the macarons mature in the fridge for a day after filling to enhance the flavor.
