Ingredients

  • 1 bunch kale, chopped
  • 1 Honeycrisp apple, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped kale, sliced apple, walnuts, feta cheese, red onion, and dried cranberries.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until the dressing is well combined.
  3. Pour the dressing over the salad mixture. Toss everything together gently until all ingredients are well coated.
  4. Serve immediately or let it marinate in the fridge for about 30 minutes to enhance the flavors.
