Description

A delightful one-pan meal combining sweet honey, smoky BBQ sauce, and tender chicken with perfectly roasted baby potatoes.


Ingredients

  • 4 chicken thighs
  • 2 cups baby potatoes
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking. While the oven warms up, get your ingredients ready by washing and halving the baby potatoes.
  2. Mix together the honey and BBQ sauce in a medium bowl until well combined.
  3. Season the chicken thighs with salt and pepper on both sides. Heat olive oil in a large oven-safe pan over medium-high heat and sear the chicken thighs for about 5 minutes on each side.
  4. Add the baby potatoes to the pan alongside the chicken. Pour the honey BBQ mixture over everything and bake for 25-30 minutes until the chicken is fully cooked and potatoes are tender.
  5. Garnish with fresh herbs before serving if desired.

Notes

For crispier skin, try broiling the chicken for the last few minutes of baking.
