- 4 chicken thighs
- 2 cups baby potatoes
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking. While the oven warms up, get your ingredients ready by washing and halving the baby potatoes.
- Mix together the honey and BBQ sauce in a medium bowl until well combined.
- Season the chicken thighs with salt and pepper on both sides. Heat olive oil in a large oven-safe pan over medium-high heat and sear the chicken thighs for about 5 minutes on each side.
- Add the baby potatoes to the pan alongside the chicken. Pour the honey BBQ mixture over everything and bake for 25-30 minutes until the chicken is fully cooked and potatoes are tender.
- Garnish with fresh herbs before serving if desired.
Notes
For crispier skin, try broiling the chicken for the last few minutes of baking.
