Ingredients

- 1 cup powdered sugar
- 1/4 cup corn syrup
- 1/2 teaspoon peppermint extract
- 1 tablespoon unsalted butter, softened
- 8 ounces bittersweet chocolate, chopped
- 2 teaspoons coconut oil
Instructions
- In a bowl, mix powdered sugar, corn syrup, peppermint extract, and softened butter until smooth.
- Form the mixture into small patties and place them on a lined baking sheet.
- Freeze for about 30 minutes, or until firm.
- In a microwave-safe bowl, melt the chopped chocolate with coconut oil until smooth.
- Dip each peppermint patty into the melted chocolate, covering completely.
- Return to the baking sheet and refrigerate until the chocolate sets, about 20 minutes.
