Description

Delicious homemade peppermint patties with a creamy mint center and rich chocolate coating. Perfect for a sweet treat or gift!


Ingredients

  • 1 cup powdered sugar
  • 1/4 cup corn syrup
  • 1/2 teaspoon peppermint extract
  • 1 tablespoon unsalted butter, softened
  • 8 ounces bittersweet chocolate, chopped
  • 2 teaspoons coconut oil

Instructions

  1. In a bowl, mix powdered sugar, corn syrup, peppermint extract, and softened butter until smooth.
  2. Form the mixture into small patties and place them on a lined baking sheet.
  3. Freeze for about 30 minutes, or until firm.
  4. In a microwave-safe bowl, melt the chopped chocolate with coconut oil until smooth.
  5. Dip each peppermint patty into the melted chocolate, covering completely.
  6. Return to the baking sheet and refrigerate until the chocolate sets, about 20 minutes.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.
