Homemade Lo Mein Noodles

Description

A delightful and customizable dish loaded with fresh vegetables and protein, bringing the taste of takeout right to your kitchen.


Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 cup water (more if needed)
  • 2 tablespoons vegetable oil
  • Soy sauce, to taste
  • Vegetables of choice (carrots, bell peppers, broccoli)
  • Protein of choice (chicken, shrimp, tofu)
  • Sesame oil (optional)

Instructions

  1. In a mixing bowl, combine the flour and salt, creating a well in the center. Add the eggs and water to the well, mixing until a rough dough forms.
  2. Transfer the dough onto a floured surface and knead until it’s smooth and elastic, about 10 minutes. Cover the dough with a cloth and let it rest for 30 minutes.
  3. After resting, roll the dough out to about 1/8 inch thick. Use a sharp knife or pizza cutter to slice the dough into your desired noodle shapes.
  4. Bring a large pot of water to a boil. Add the freshly cut noodles and cook for about 3-4 minutes, or until they float and are tender. Drain and set aside.
  5. In a large skillet, heat the vegetable oil over medium-high heat. Toss in your choice of proteins and vegetables, stir-frying for about 5-6 minutes until cooked through.
  6. Add the drained noodles to the skillet along with soy sauce to taste, swirling everything together.
  7. For an extra layer of flavor, drizzle sesame oil over the top if desired. Serve hot.

Notes

Experiment with different types of vegetables for variety. To reheat leftovers, add a splash of water and microwave until warmed through.
